Chorizo and Eggs Recipe

This chorizo and eggs recipe is easy to make and a festive way to spice up your breakfast.

  • 6 oz chorizo sausage
  • 6 Davidson's Safest Choice® pasteurized egg(s)
  • 1 medium potato, par-baked
  • 12 tortilla shells
  • 1 c salsa
  • 1/2 c shredded cheese
  • 1 tomato, diced
  • 1/2 c sour cream
  • 1/2 bunch cilantro, chopped


1. Cook chorizo over medium heat until browned, about 15 minutes.

2. Meanwhile, whisk eggs and dice potato. Set aside.

3. Once chorizo is browned, add eggs and potato and cook until eggs are scrambled and set, about 5 minutes.

4. Scoop chorizo and eggs mixture into tortillas. Top with salsa, cheese, tomatoes, sour cream, and cilantro. Serve immediately.
