Cranberry Orange Corn Muffins Recipe

  • 2 Davidson's Safest Choice® pasteurized egg(s)
  • 3/4 c whole milk
  • 1/4 c plain Greek yogurt
  • 1/8 c fresh squeezed orange juice
  • 3 Tbsp extra virgin olive oil
  • 1 tsp almond extract
  • 1 c yellow cornmeal
  • 1/2 c whole wheat flour
  • 1/4 c all-purpose flour
  • 1/2 c evaporated cane sugar
  • 1 Tbsp baking powder
  • 3/4 tsp salt
  • 1 c dried cranberries
  • 2 Tbsp orange zest


  1. Preheat oven to 350°F. Line a muffin pan with lightly greased 2 1/2-inch muffin cup liners.
  2. In small bowl lightly whisk together eggs, milk, yogurt, orange juice, olive oil and almond extract until combined. Set aside.,
  3. In large bowl stir together cornmeal, flours, sugar, baking powder and salt. Create a well in the center, add liquid mixture, stir together until combined and moistened. Fold in dried cranberries and orange zest.
  4. Spoon batter into prepared liners to 2/3 full. Bake 20 minutes, or until toothpick inserted in center comes out clean. Cool slightly then remove from pan and cool on a wire rack at least 5 minutes before serving.
