Croque Madame Recipe

This croque madame recipe is the ultimate sandwich. Toasted ham and cheese topped with a fried egg is an easy and quick lunch or dinner option that is rich and satisfying.

  • 4 slices white bread, about 1/3-inch thick
  • 2 Tbsp Dijon-style mustard
  • 1 1/2 c shredded Gruyere or Swiss cheese, divided
  • 1/4 lb sliced deli ham
  • 4 tsp softened butter
  • 4 tsp butter
  • 2 Davidson's Safest Choice® pasteurized egg(s)


  1. Spread one side of each bread slice with mustard. Sprinkle 1/4 cup cheese on 2 bread slices, then top with equal amounts ham and another 1/4 cup cheese each. Close sandwiches with second bread slice, mustard side down.
  2. Heat large nonstick skillet over medium-low to medium heat until hot. Spread 1 teaspoon softened butter on outsides of each sandwich. Cook sandwiches until browned and cheese begins to melt, about 2-3 minutes. Turn and top each with additional 1/4 cup cheese. Continue cooking Cook until other side is browned and cheese is melted, about 2-3 minutes.
  3. Meanwhile, cook eggs. In nonstick skillet set over medium-low heat, melt 4 teaspoon butter until bubbling. Gently slide eggs, one at a time, into skillet. For over-easy, cook 1-2 minutes—just until whites are set and opaque, and yolks begin to firm. Carefully turn eggs over. Cook another minute to firm the yolks, or until desired doneness. Place one egg atop each sandwich.
