Grilled Caesar Salad with Pomegranate, Pepitas, and Shallots Recipe

Caesar Dressing Ingredients


  • 1 Davidson's Safest Choice® pasteurized egg(s)
  • 1 tsp Dijon mustard
  • 2 Tbsp lemon juice
  • 2 Tbsp chopped parsley
  • 1/4 tsp Worcestershire sauce
  • 2 Tbsp capers
  • 1/4 tsp salt
  • 1/8 tsp ground pepper
  • 1 large garlic clove, crushed
  • 1/2 c extra virgin olive oil
  • 2 Tbsp Parmesan cheese, grated


  1. In blender or food processor blend egg, Dijon mustard, lemon juice, parsley, Worcestershire sauce, capers, salt, pepper, and garlic until whipped. While motor is running, slowly drizzle in extra virgin olive oil. Keep blending until dressing is creamy. Transfer dressing into serving bottle and stir in grated Parmesan cheese. Refrigerate until ready to serve.

Salad with pomegranate, pepitas, and shallots

  • 2 Tbsp extra virgin olive oil, divided use
  • 12 shallots
  • 6 Romaine lettuce hearts, halved lengthwise
  • 1/4 c pepitas
  • 1/4 c shaved Parmesan cheese
  1. Place small sauté pan over medium high heat and add 1 tablespoon extra virgin olive oil. Once oil is hot, add shallots and cook until caramelized, but not mushy. Set aside.
  2. Heat large grill pan to high heat and add 1 tablespoon extra virgin olive oil.
  3. When oil is hot, grill halved romaine hearts, cut side down, until brown, about 3 minutes. Turn romaine hearts over and grill other side for an additional 2-3 minutes.
  4. Transfer romaine hearts to serving plate and garnish with caramelized shallots and pepitas, pomegranate arils, and shaved Parmesan cheese
  5. Serve immediately with Caesar dressing.
