Healthy Peanut Butter Chocolate No Bake Cookie Recipe

  • 1 c natural peanut butter
  • 3/4 c honey
  • 1/4 c coconut oil
  • 1 1/2 tsp vanilla
  • 1/4 tsp salt
  • 2 Davidson's Safest Choice® pasteurized egg(s)
  • 1/3 c dark cocoa powder
  • 3 1/2 c old-fashioned oats
  • 1 c dried blueberries


  1. Mix peanut butter, honey, and coconut oil in medium saucepan over medium heat. Cook, stirring often just until melted and completely combined. Remove from heat and cool slightly.
  2. Pour mixture into large bowl and stir in vanilla, salt, and eggs. Slowly stir in cocoa powder, oats, and blueberries until a thick batter is formed; add more or less oats if needed.
  3. Cool batter in fridge for at least 30 minutes. Line a baking sheet with parchment paper. Scoop cookie batter into roughly 1/4 cup mounds and flatten with spatula on prepared sheet. Store sealed in fridge.
