Jalapeño Potato Latkes with Chipotle Cream and Fried Eggs Recipe

Chipotle Cream


  • 1/4 c sour cream
  • 2 1/2 tsp chipotle peppers in adobo sauce, chopped


  1. Combine peppers and sour cream in food processor and blend until smooth. Set aside.

Jalapeño Potato Latkes and Fried Eggs

  • 1 20-oz package shredded hash browns
  • 1/4 c green onion, diced
  • 1 Tbsp jalapeño, finely chopped
  • 6 Davidson's Safest Choice® pasteurized egg(s)
  • 2 Tbsp flour
  • 1 tsp baking powder
  • salt to taste
  • pepper to taste
  • 3 Tbsp vegetable oil
  • cilantro (optional garnish) to taste
  1. Combine hash browns. onion, jalapeño, 2 eggs, flour, baking powder, salt, and pepper in a large bowl. Mix well to combine. 
  2. Heat vegetable oil in large skillet over medium heat. Spoon 1/4 cup potato mixture, for each latke, and gently press the mixture until it's approximately 3 1/2 inches in diameter. Fry until golden brown and flip.
  3. Fry 4 eggs until desired doneness. Serve latkes topped with chipotle cream, garnished with fresh cilantro, and a fried egg.
