Make-Your-Own Breakfast Sandwich Bar Recipe

Rejuvenate weekend family breakfast or brunch in your house with a kid-friendly, make-your-own breakfast sandwich bar! Recipe courtesy Jenny Shea Rawn, MS, MPH, RD of My Cape Cod Kitchen.

  • 4 whole grain English muffins
  • 1/2 tsp extra virgin olive oil, divided use
  • 2 c baby spinach, packed
  • 4 Davidson's Safest Choice® pasteurized egg(s)
  • 3/4 c shredded cheddar cheese, divided use
  • 1 c canned black beans
  • 1 c cherry tomatoes, thinly sliced lengthwise
  • 1 avocado, thinly sliced
  • salt to taste
  • pepper to taste


  1. Toast English muffins and set aside.
  2. Heat 1/4 teaspoon extra virgin olive oil over medium heat in a sauté pan until glistening. Add spinach and sauté for about a minute, until spinach is just wilted; set aside.
  3. Beat eggs and 1/4 cup shredded cheddar together. Heat remaining 1/4 teaspoon extra virgin olive oil in the sauté pan until glistening then add the egg mixture. Let it sit for about 30 seconds. Stir, lift, and fold eggs with a spatula until they are set (but still moist, soft, and glossy). Remove from heat and place into a bowl.
  4. Set up your breakfast bar by placing whole grain English muffins, sautéed spinach, shredded cheddar, black beans, sliced cherry tomatoes, and sliced avocados in separate bowls on the counter top with the salt and pepper.
  5. Invite everyone to make their own breakfast sandwich and enjoy!
