Monte Cristo Waffle Breakfast Sandwich Recipe

This Monte Cristo waffle breakfast sandwich is a ham and cheese sandwich on waffles dipped in egg batter and fried like French toast. Serve with a sprinkling of powdered sugar and raspberry jam on the side. Recipe courtesy Chris of Shared Appetite.

  • 6 Davidson's Safest Choice® pasteurized egg(s), divided use
  • kosher salt to taste
  • freshly ground black pepper to taste
  • 8 frozen waffles, cooked according to package directions
  • 1 c shredded Gouda cheese
  • 8 thin slices spiral ham, heated
  • 1/4 c milk
  • 2 Tbsp unsalted butter
  • raspberry jam to taste
  • powdered sugar (garnish) to taste


  1. In small mixing bowl, beat four eggs and season with kosher salt and freshly ground black pepper. Spray skillet with cooking spray and heat over medium heat. Cook eggs stirring with spatula occasionally to break eggs into pieces, until just set. Remove scrambled eggs from skillet and set aside.
  2. Top four of the waffles with a handful of Gouda cheese, two slices of ham, scrambled eggs, and another handful of cheese. Top with another waffle.
  3. In small mixing bowl, whisk together remaining two eggs and milk. Heat butter in large skillet over medium-high heat. Working in batches if necessary, dip sandwiches quickly in egg-milk mixture, and then cook in skillet, flipping once, until both waffles are golden brown and cheese is melted.
  4. Sprinkle sandwiches with powdered sugar and serve with raspberry jam.
