No-Bake Cheesecake Bites Recipe

This no-bake cheesecake bites recipe is perfect for summer. Recipe courtesy Jen of Nourished Simply.

  • 8 oz ricotta cheese
  • 1 1/2 c oats
  • 4 Tbsp unsalted butter
  • 3 Tbsp honey
  • 8 oz low-fat cream cheese, softened to room temperature
  • 1 Davidson's Safest Choice® pasteurized egg(s)
  • 1 Davidson's Safest Choice® pasteurized egg white(s)
  • 1 tsp vanilla
  • 1/4 c stevia
  • 1/4 c sugar


  1. Place ricotta cheese in cheese cloth and drain for about 3 hours.
  2. In medium bowl, mix together oats, butter, and honey.
  3. Divide oat mixture evenly among 12 cupcake cups. Press oat mixture into bottom of each cup. Place cups into refrigerator until cheesecake mixture is ready.
  4. Combine drained ricotta cheese with cream cheese, egg, egg white, vanilla, stevia, and sugar in medium bowl. Blend until smooth.
  5. Divide cheesecake mixture among cupcake cups. Place in refrigerator for 2-3 hours or until set.


Top with sliced fruit.
