Rise n' Shine Granola Bars Recipe

These rise n' shine granola bars are perfect for busy mornings or a healthy afterschool snack. Packed with protein and wholesome ingredients such as almonds, pistachios, and pumpkin seeds, these bars will keep you alert and full of energy.

  • 2 c old-fashioned oats, gluten-free
  • 1/2 c pistachios, raw
  • 1/2 c chopped almonds, raw
  • 1/4 c pumpkin seeds, raw
  • 1/2 c Medjool dates, pitted
  • 1/2 c dried cranberries
  • 1/4 c chocolate chips
  • 1/3 c honey
  • 2 Davidson's Safest Choice® pasteurized egg white(s)
  • 1 Tbsp coconut oil
  • 1 tsp cinnamon
  • 1/2 tsp allspice
  • 1/2 tsp salt


  1. Preheat oven to 375ºF.
  2. Evenly spread oats, pistachios, almonds, and pumpkin seeds on parchment lined baking sheet; bake for 10 minutes or until lightly roasted.
  3. Add dates to food processor and pulse until they form a paste. 
  4. Cool roasted ingredients, about 5 minutes. 
  5. Add all ingredients to large bowl and mix until well combined. 
  6. Reduce oven temperature to 325º F.
  7. Pour mixture into 8x8 inch parchment lined pan; spread out evenly.
  8. Bake for 20 minutes or until golden.
  9. Allow granola to cool completely, about 1 hour. Cut into 12 equally sized bars or refrigerate overnight.
