Safe Caesar Dressing Recipe

This safe Caesar dressing recipe is simple and far superior to the store-bought version.

  • 1 Davidson's Safest Choice® pasteurized egg(s)
  • 2 tsp garlic, finely chopped
  • 1 anchovy fillet, mashed (or 2 inches of anchovy paste)
  • pinch coarse salt
  • 2 Tbsp freshly squeezed lemon juice
  • 3 drops Worcestershire sauce
  • 6 Tbsp extra-virgin olive oil
  • 2 Tbsp freshly grated Parmesan cheese


  1. In a blender or food processor combine egg, garlic, anchovy, salt, lemon juice, and Worcestershire sauce until blended.
  2. With the motor running, slowly drizzle in the olive oil. When the dressing is well combined and creamy, pour it into a bowl and stir in Parmesan cheese.
