Salmon Caesar Salad with Parmesan Croutons Recipe

This salmon Caesar salad with Parmesan croutons has thinly-sliced cucumbers and cherry tomatoes, protein-packed salmon, shaved fresh Parmesan cheese, and tasty homemade whole wheat Parmesan croutons. Recipe courtesy Rima of Kleiner Nutrition.

Parmesan Croutons


  • 4 slices whole wheat bread
  • 4 Tbsp olive oil
  • 1 tsp garlic salt
  • 1 Tbsp Parmesan cheese, grated or shredded


  1. Preheat oven to 350°F. Tear bread apart and spread on baking pan.
  2. Drizzle olive oil over bread; sprinkle garlic salt and Parmesan cheese on top of bread. Mix together until oil, garlic salt, and Parmesan cheese are evenly distributed.
  3. Bake for 15 minutes or until crunchy and brown.

Caesar Dressing

  • 2 cloves garlic, minced
  • 1 Tbsp Dijon mustard
  • 2 Davidson's Safest Choice® pasteurized egg yolk(s)
  • 1 Tbsp freshly squeezed lemon juice
  • 1 1/2 tsp Worcestershire sauce
  • 1/2 tsp hot sauce
  • 2 Tbsp plain kefir
  • 1/4 c olive oil
  • 1 Tbsp Parmesan cheese, grated or shredded
  • salt to taste
  • pepper to taste
  1. Mix garlic, mustard, egg yolks, lemon juice, Worcestershire sauce, and hot sauce in bowl or blender. Add kefir, olive oil, and Parmesan cheese; mix until well-blended. Add salt and pepper.

Salmon Caesar Salad

  • 4 Romaine lettuce heads
  • 1 (7 oz) pouch salmon
  • 1 cucumber, cut in half length-wise and thinly sliced
  • 10 cherry tomatoes, thinly sliced
  • 4 oz fresh Parmesan cheese, shaved
  1. Tear lettuce leaves into large bowl.
  2. Top with salmon, cucumbers, tomatoes, and Parmesan cheese.
  3. Drizzle with salad dressing and top with croutons.
