Soft Boiled Egg & Avocado Toast Recipe

This soft boiled egg & avocado toast recipe is perfect for busy mornings.

  • 1/2 large avocado, roughly chopped
  • 2 thick slices rustic sourdough bread, toasted
  • 2 Davidson's Safest Choice® pasteurized eggs, soft boiled
  • salt to taste
  • pepper to taste
  • 1/4 tsp red pepper flakes
  • extra virgin olive oil
  • cilantro (garnish)


  1.  Lightly mash avocado. Divide avocado between slices of toast.
  2. Top each slice with (halved) soft boiled egg. Season with salt and pepper to taste.
  3. Sprinkle each slice with red pepper flakes.
  4. Drizzle olive oil over each slice and garnish with cilantro.
