  • 2 Davidson's Safest Choice® pasteurized egg(s)
  • 1/3 c coconut oil, melted
  • 1/2 c speculoos spread
  • 1/2 c sugar
  • 1 tsp vanilla extract
  • 1 1/2 c almond flour
  • 1/2 c coconut flour
  • 1/4 tsp salt
  • 1/2 c chocolate chips
  • 6 speculoos cookies, crushed


  1. Put eggs, coconut oil, speculoos spread, sugar, and vanilla extract in a large mixing bowl. Whisk together with a hand or stand mixer until well-combined.
  2. Sift together almond flour, coconut flour, and salt in a small bowl. Combine with the egg mixture and mix well. Add chocolate chips and crushed cookies; stir gently with a spoon until incorporated evenly throughout dough.
  3. Use a spoon or a small cookie scoop to make small cookie dough balls. Refrigerate until ready to serve.
