Spinach Omelet Recipe

"I enjoy making omelets with healthy and fresh ingredients. They can be served for breakfast or any meal. They are easy and quick to make. Omelets are a good option for whatever ingredients you have on hand. I make them for dinner sometimes when I am short on time, but still want something healthy to eat." — Dolores Johansen

  • 6 Tbsp coconut oil, divided
  • 2 small bunches of spinach
  • 2 baby portobello mushrooms, sliced
  • 1 scallion, chopped
  • 2 cherry tomatoes, sliced
  • 2 Tbsp chopped walnuts
  • 3 Davidson's Safest Choice® pasteurized egg(s)
  • 2 Tbsp goat cheese, crumbled
  • salt to taste
  • pepper to taste


  1. Heat 3 tablespoons of the coconut oil in a small frying pan and sauté spinach, mushrooms, scallion, tomatoes, and walnuts over low heat for 2-3 minutes. Remove from pan, set aside.
  2. Beat eggs in small bowl and heat remaining coconut oil in pan until hot and melted. Pour beaten eggs into pan forming a circle and let sizzle until partially done.
  3. Place sautéed ingredients on one side of circle, sprinkle with goat cheese crumbles and gently fold other half of circle on top of sautéed ingredients. Cook 1-2 minutes until done and carefully lift/slide with spatula while tilting pan slightly until omelet falls onto plate. Serve while hot.
