Tzatziki Sauce


  • 1 Persian cucumber
  • 1 tsp salt
  • 2 garlic cloves
  • 2 Tbsp fresh chopped dill
  • 1 1/2 Tbsp freshly squeezed lemon juice
  • 1 Tbsp olive oil
  • 1/2 tsp Himalayan salt
  • 1/4 tsp black pepper


  1. Peel cucumber, slice in half lengthwise, remove seeds with spoon, and dice into small pieces. Place in colander, sprinkle with salt, toss, and allow to rest 30 minutes to draw all water out. Rinse the pieces and squeeze out excess liquid using paper towel or cheese cloth.
  2. Place cucumber, garlic, dill, lemon juice, olive oil, salt, and pepper in food processor; process until well blended. Stir mixture into yogurt. Refrigerate for at least 2 hours.

Sunny Greek Quinoa Breakfast Bowl

  • 1/2 c almond milk
  • 1/2 c water
  • 1/2 c quinoa
  • 1/2 c sliced cucumber
  • 1/2 c sliced cherry tomatoes
  • 1 tsp coconut oil
  • 2 Davidson's Safest Choice® pasteurized egg(s)
  • 4 Tbsp Tzatziki sauce
  • 2 c plain Greek yogurt
  1. Combine milk, water, and quinoa in saucepan and bring to a boil. Reduce heat to low and simmer until most of the liquid has been absorbed, approximately 8 minutes.
  2. Divide evenly into 2 bowls and top with cucumbers and tomatoes.
  3. Crack an egg into a small bowl. Heat small nonstick pan over medium heat. Add coconut oil. Once the oil has melted, gently add egg into pan. Cook until white is set and yolk is still runny, about 2-3 minutes. Sprinkle with salt and pepper. Repeat with second egg.
  4. Slide egg on top of quinoa. Drizzle tzatziki sauce over. Enjoy!
